Mengembangkan menu baru yang sesuai dengan konsep brand, tren pasar, serta kebutuhan bisnis.
Melakukan riset tren makanan, bahan baku baru, teknik memasak, dan inovasi culinary untuk menciptakan produk yang menarik.
Melakukan proses uji coba (food trial) hingga menemukan standar rasa, tekstur, tampilan, dan costing yang ideal.
Menyusun Standard Recipe (SR), Standard Portion, dan SOP produksi untuk setiap menu baru.
Menganalisis dan menghitung food cost, yield, dan portion control untuk memastikan menu profitable.
Melakukan shelf-life test untuk produk tertentu (sauce, pastry, frozen, ready-to-cook, dll).
Berkoordinasi dengan tim operasional, purchasing, dan QC untuk memastikan bahan baku sesuai standar.
Memberikan training kepada tim kitchen terkait implementasi menu baru dan teknik memasak yang benar.
Melakukan evaluasi menu existing untuk peningkatan kualitas, efisiensi biaya, atau penyegaran varian.
Bekerja sama dengan tim Marketing untuk kebutuhan launching menu (konten, shooting, testing).
Mengontrol kualitas rasa dan konsistensi produk di seluruh outlet/outlet trial.
Mencari supplier baru yang dapat memberikan bahan baku berkualitas dengan harga kompetitif.
Membuat laporan R&D terkait progress, hasil trial, dan rekomendasi menu.
